20+ FAVOURITE PLANT BASED FALL RECIPES


Autumn is definitely approaching here on the Alberta prairies! The leaves are changing, the temperatures are dropping and I find myself craving all things warm, cozy and comforting. This transitional time of year is also my favourite for gorgeous, seasonal produce — and I’ve spent the past couple of weeks pouring over my RECIPE archives, adding our most loved fall recipes to the menu! If you follow along with my socials you’ve likely seen these delicious seasonal dishes trickle into my feeds, but I wanted to round up my 20+ Favourite Plant Based Fall Recipes for you here at JustineCelina for easy reference. It’s been so much fun taking a walk down memory lane and digging up my old recipes (and old, pre-professional photos!) to appreciate just how far I’ve come on my blogging and recipe development journey over the past 6 and a half years! It’s the height of summer here on the Alberta prairies — and I’m thrilled to bring you another recipe roundup to celebrate the very best ingredients this season has to offer! Summer is my absolute favourite time of year to take a trip to the farmers market or our Country Garden in search of gorgeous produce, herbs and flowers to inspire my culinary creations. My hope is that this post featuring 20+ Healthy Plant Based Summer Recipes also inspires you to do the same, while supporting your local markets, growers and farmers whenever possible! MY DRY JANUARY EXPERIENCE


Friends, I’m elated to be back today with the first completely new piece of content I’ve created in 2021, dedicated to My Dry January Experience. You may have noticed that things have been more quiet than usual lately as I took a step back from content creation to refocus my time, attention and resources on reviewing 2020 and getting inspired for the year ahead. While January wasn’t the most exciting or glamorous month, I’m so grateful I finally gave myself permission to focus on what matters and align with my goals! This Dry January involved a lot of self reflection, accountability and honesty about my blogging and entrepreneurial journey and where I want to take it. 2020 was an incredibly challenging year for so many, myself included — but it was peppered with experiences and wisdom that have afforded me a greater clarity than I’ve ever experienced. As a result, I’ve emerged from 2020 a much different person (as I’m sure many of us have!). 

This time last year were in Huatulco and I was sipping a mezcalrita with my toes in the sand — oh how times have changed! Despite the drastically different circumstances of present times, this isn’t my first January, or sober month. It’s something I do whenever I feel I need a hard reset — and I’ve always found it to be in incredibly rewarding experience! After an indulgent holiday season, I always look forward to getting back on track and into a routine that supports my overall well being in January. During the first week of each new year, I find myself searching my FOOD archives for my healthiest winter recipes — and know you’re doing the same, as my views on these posts skyrocket. So, I created my 20+ Healthy Recipes to Kick Start The New Year roundup! This mega post contains over 20 of my healthiest, freshest, plant-based recipes incorporating all the gorgeous seasonal produce available to us in early January, for easy browsing reference. From breakfast through dinner, with nourishing snacks, fresh juices and smoothies along the way, you’ll find everything you need to create a healthy January meal plan in this post! As always, my recipes are free of dairy, gluten and refined sugar — and most are vegetarian / vegan. I’ve indicated these categories in this post with convenient labels so you can easily find what you’re looking for! 

Although I do my best to maintain my plant-based diet over the holidays, I firmly believe in balance — you better believe I indulge in my fair share of treats as well! As someone with dairy and gluten sensitivities, I find my digestion can easily get thrown out of whack when I’m not being as mindful while I’m eating, drink and being merry. My favourite ways to kick start my metabolism and get things running smoothly again is by treating my body to lots of colourful fruits and veggies, juices and smoothies, hearty salads and bowls, plant-based entrées and simple, wholesome soups. I also aim to keep my snacking to a minimum and give the baking and the booze a rest (you won’t find any snacks, baking or cocktail recipes in this roundup). ROSEMARY FIG JAPANESE WHISKY SOUR


Fig season is upon us — and I’m back today with a fresh, summer meets autumn sip to celebrate! My Rosemary Fig Japanese Whisky Sour was actually conceived at the height of quarantine back in April (when we were encouraged to limit our grocery runs as much as possible) — another exercise in using what we had on hand to to whip up a comforting COCKTAIL at home. Despite this recipe using fig preserves (rather than fresh figs you see photographed), I waited patiently for fig season to bring this inventive cocktail to life — simply so I could make it as beautiful as possible! And while I never thought I’d be incorporating Japanese whisky or egg whites into a cocktail — here we are. 2020 has been full of curveballs, but one thing is has been good for is nurturing my mixology skills and pushing me to create more resourceful, experimental recipes! There have been many a Rosemary Fig Japanese Whisky Sour consumed this year as this recipe underwent an intensive testing process to ensure it was shaken to perfection — and I’m elated to finally bring it to JustineCelina this fall! 

My Rosemary Fig Japanese Whisky Sour is a deliciously luxurious juxtaposition of fall flavours and textures that you can shake up at home. This creative cocktail is creamy, smoky, sweet and sour — enveloping your tastebuds in early autumn inspired warmth! A SIMPLE EASTER DINNER FOR TWO


Remember when I mentioned over the holidays that I wanted to bring more ENTERTAIN content to JustineCelina this year? Although these weren’t quite the circumstances I envisioned (now that’s an understatement!), I’m thrilled to share A Simple Easter Dinner For Two with you today! While Easter certainly looked a lot different for everyone this year given the current global situation, we decided to make the most of it and celebrate here in our home in Calgary — just the two of us. Never in my wildest dreams did I imagine we’d spend an Easter without the large family gatherings in the country we’ve become accustomed to over the years — but rather than mourning the loss of our cherished traditions, we resolved to stay home and create a few of our own!

In over a decade together, this was the first Easter dinner we’ve celebrated in our home — and I wanted to mark the occasion by capturing these memories to look back on. I put on a dress, ordered flowers, made some nostalgic family recipes along with my first ever carrot cake — then we popped some Prosecco and enjoyed A Simple Easter Dinner For Two (Adam was actually peeling potatoes in the kitchen to my left as I snapped these photos from my tripod!). I was reminded of my ability to find beauty in uncertainty and create amongst chaos — these are things I find very cathartic and truly bring me joy. While it wasn’t a traditional Easter, it was still a lovely weekend — gifting us with lessons in resiliency, enjoying life’s simple pleasures and doing the best you can with what you have, where you are! 28 PLANT BASED RECIPES MADE WITH PANTRY STAPLES, FROZEN FOOD AND STURDY PRODUCE


Happy Saturday, friends. How’s everyone doing? These are certainly strange and uncertain times. Never in my wildest dreams did I imagine blogging about this topic, under these circumstances! But like many of you, I’ve been reflecting on how I can best serve my community in this time of need — and its been so heartening reading stories of individuals and businesses stepping up to care for one another. I’ve always taken great comfort in preparing nourishing meals for myself, my family and my friends — and that extends to all of you! In light of recent world events and the different realities we’re all currently facing in this unprecedented situation, this week I focused on what I could do here at JustineCelina to help. As we spend more time in our homes over the next few weeks (or months) and adapt to a new normal, we’ll inevitably be cooking and eating more meals at home — something I’m very passionate about. So, I rescheduled the pretty cocktail I had originally slated to publish on Spring Equinox (which is now live!) to bring you 28 Plant Based Recipes Made With Pantry Staples, Frozen Food and Sturdy Produce — the ultimate resource in feeding yourself and your family well, and economically, during this challenging time.
