20+ PLANT BASED SPRING RECIPES


Spring is definitely in the air… can you feel it?! The weather is absolutely beautiful here in Calgary as we approach Spring Equinox — and I couldn’t be more thrilled! I’ve been taking every opportunity to get outside to enjoy long walks, runs and hikes as I work towards my health and wellness goals for 2021. Each year as we transition into spring, I also find myself  lightening up our meals and incorporating lots of fresh, seasonal produce, edible flowers and bright, herbaceous flavours! Over the last couple of years I’ve begun publishing seasonal recipe roundups here at JustineCelina — and in reviewing my archives, was surprised to discover that I hadn’t yet created a spring version. So, I’ve scoured my virtual recipe box to compile my favourite 20+ Plant Based Spring Recipes across culinary categories, from breakfast through happy hour! If you’re looking for some healthy, veggie-centric (and largely vegan), spring meal ideas utilizing all the gorgeous seasonal produce available to us from March though June, you’ve come to the right place!

While I’m perpetually testing new recipes, I’ve also published a solid repertoire of spring-inspired eats over the past 6 years (some of which are Wild Rose D-Tox Friendly!). Today I’m excited to share them all with you in this convenient, easy-to-browse format that you can come back to again and again. As always, my recipes are simple, seasonal, free of dairy, gluten and refined sugar and packed full of  fresh, nourishing ingredients — perfect to make after a weekend grocery run or trip to the farmer’s market! ROSEMARY FIG JAPANESE WHISKY SOUR


Fig season is upon us — and I’m back today with a fresh, summer meets autumn sip to celebrate! My Rosemary Fig Japanese Whisky Sour was actually conceived at the height of quarantine back in April (when we were encouraged to limit our grocery runs as much as possible) — another exercise in using what we had on hand to to whip up a comforting COCKTAIL at home. Despite this recipe using fig preserves (rather than fresh figs you see photographed), I waited patiently for fig season to bring this inventive cocktail to life — simply so I could make it as beautiful as possible! And while I never thought I’d be incorporating Japanese whisky or egg whites into a cocktail — here we are. 2020 has been full of curveballs, but one thing is has been good for is nurturing my mixology skills and pushing me to create more resourceful, experimental recipes! There have been many a Rosemary Fig Japanese Whisky Sour consumed this year as this recipe underwent an intensive testing process to ensure it was shaken to perfection — and I’m elated to finally bring it to JustineCelina this fall! 

My Rosemary Fig Japanese Whisky Sour is a deliciously luxurious juxtaposition of fall flavours and textures that you can shake up at home. This creative cocktail is creamy, smoky, sweet and sour — enveloping your tastebuds in early autumn inspired warmth! Premium Japanese whisky (thanks to Adam’s latest spirit obsession!) combines with egg whites (with a vegan option), fig syrup, bitters, fresh lemon juice and a sprig of rosemary, shaken into a comforting sip that celebrates quintessential fall flavours in cocktail form. SUMMER 2020 LOOKBOOK + STYLE CONTENT UPDATE


Friends and fashionistas, I’m absolutely elated to bring you the first LOOKBOOK I’ve published since April — my Summer 2020 Lookbook! It would be an incredible understatement to say that 2020 hasn’t shaped up the way any of us could have predicted and that our lifestyles have changed dramatically as a result of COVID-19. While FASHION is one of my true loves and lifelong passions, I made the decision to pause my regularly scheduled seasonal LOOKBOOKS from May through August to embrace a slower pace of life, navigate through some incredibly difficult situations and make a conscious effort to be grateful for what I have, while being mindful of my spending. Given the state of the world and the economy, it simply didn’t feel right to promote purchasing new clothing during the height of a pandemic. And to be completely transparent, I was also feeling quite uninspired fashion wise as all of the events, meetings and occasions that would typically inspire my style content had halted — as I’m sure many of you can relate! Although I was able to experiment with self portraiture and push the boundaries of my home studio set up to produce some beautiful content during quarantine, it’s safe to say I reached the limit of how of many chic loungewear outfit ideas or breezy spring dresses I could shoot in my Living Room with my self timer and tripod! 

A change of scenery after 3 months of quarantine was exactly what I needed to feel re-inspired — so I packed up and headed to my childhood home in rural Alberta to enjoy the peace and tranquility of  the country while capturing my Summer 2020 Lookbook (with my Mom back behind the lens for many of the images I’m sharing today!). This summer I find myself seeking simplicity and comfort in every area of my life — and that’s definitely reflected in my wardrobe. Purchasing timeless, easy to wear pieces in multiple colourways has been a common theme this summer — and I’ve expanded my summer wardrobe with some fantastic, affordable basics I know I’ll enjoy for years to come. While I’ll always enjoy incorporating trends into my wardrobe in a way that’s authentic to my personal style, this year, I find myself increasingly drawn to classic pieces. These days, fashion moves fast — and I find myself moving in exactly the opposite direction as I mindfully curate my wardrobe. I’ve been living in breezy, effortless silhouettes made from linen, cotton and natural, lightweight fabrics — my summer style has never been more casual (or comfortable) and I’m fully embracing it! Adventure to the tranquil Alberta prairies with me today as I fuse my love of free spirited fashion and stunning natural landscapes in my Summer 2020 Lookbook — featuring 12 effortless, accessible, classic seasonal looks, plus tips on how to transition key pieces into autumn. Chocoholics, this recipe’s for you! I’ve actually had these Raw Red Velvet Vegan Brownies in development since last spring and am so thrilled to finally share it here at JustineCelina. Happy Saturday, friends. How’s everyone doing? These are certainly strange and uncertain times. Never in my wildest dreams did I imagine blogging about this topic, under these circumstances! But like many of you, I’ve been reflecting on how I can best serve my community in this time of need — and its been so heartening reading stories of individuals and businesses stepping up to care for one another. SMOKED PEACH MAPLE BOURBON SMASH


Craft cocktail lovers, I’m back today with fall’s first libation in celebration of Autumn Equinox! If you frequent my FOOD or COCKTAIL sections, you’ll know that my most inspired creations are born out of making use of what we have on hand to yield unexpected combinations — and that’s exactly how this recipe came together. Late August is when our annual case of Okanagan peaches arrives and every year I end up going into peach recipe overdrive, while simultaneously eating my body weight in peaches. I’ve explored peaches in smoothies, sangrias and crumbles (that recipe will have to wait until next summer), but this year I had an itch to experiment with my favourite summer stone fruit in a proper cocktail. We’d been grilling up a storm for dinner one Friday evening and Adam had some delicious Smoked Maple Bourbon kicking around — and voila, my Smoked Peach Maple Bourbon Smash came to life right there on our patio!

This summer-meets-autumn sip juxtaposes the essence of juicy late summer fruit with a smoky grilled edge, infused with spicy autumnal warmth to create the ultimate transitional cocktail that’s equal parts sweet ‘n spicy. If you still haven’t had your fill of late summer peaches, get your grill on and imbibe this simple but sassy cocktail sure to impress both bourbon lovers and bourbon skeptics (believe it or not, I was the latter prior to this cocktail!). As always, my Smoked Peach Maple Bourbon Smash is free of dairy, gluten and refined sugar — and brimming with better-for-you ingredients, because I believe in balance in all areas of life.
