5 FESTIVE CINCO DE MAYO COCKTAILS


Fellow tequila and mezcal lovers, I’m elated to share the first my first recipe roundup dedicated exclusively to cocktails with my 5 Festive Cinco De Mayo Cocktails post! If you’re a fan of my better-for-you libations, you’ll know my love of tequila and mezcal runs deep — as does my adoration of Mexican culture. Over the past decade, we’ve been fortunate to spend quite a bit of time in Oaxaca (specifically Huatulco — one of my favourite places in the world!) and discover many fantastic artisanal tequila and mezcal varieties, visit agave farms and learn about authentic spirits and cocktail making from the locals. In fact, our home bar is always stocked with several varieties of tequila and mezcal from our travels — and I typically have a few Mexican-inspired sips in development at any given time! So today, in celebration of Cinco de Mayo, I’ve rounded up my most popular tequila and mezcal based cocktails — which all happen to be vegan, gluten free and refined sugar free! Hey, life is all about balance, right?!

Friends, I’m thrilled to finally share a post I’ve been meaning to publish for years all about My Top 10 Self Help and Personal Development Books! Although I’ve always been interested in these topics, this isn’t the type of content I would typically share in a dedicated post here at JustineCelina — until 2021, that is! As we surpass one year into a global pandemic, I find myself reflecting on the journey that’s taken place, both collectively and individually. The world has changed drastically over the last 12 months — and I have too. 20+ PLANT BASED SPRING RECIPES


Spring is definitely in the air… can you feel it?! The weather is absolutely beautiful here in Calgary as we approach Spring Equinox — and I couldn’t be more thrilled! I’ve been taking every opportunity to get outside to enjoy long walks, runs and hikes as I work towards my health and wellness goals. Each year as we transition into spring, I also find myself  lightening up our meals and incorporating lots of fresh, seasonal produce, edible flowers and bright, herbaceous flavours! Over the last couple of years I’ve begun publishing seasonal recipe roundups here at JustineCelina — and in reviewing my archives, was surprised to discover that I hadn’t yet created a spring version. So, I’ve scoured my virtual recipe box to compile my favourite 20+ Plant Based Spring Recipes across culinary categories, from breakfast through happy hour! If you’re looking for some healthy, veggie-centric (and largely vegan), spring meal ideas utilizing all the gorgeous seasonal produce available to us from March though June, you’ve come to the right place!

While I’m perpetually testing new recipes, I’ve also published a solid repertoire of spring-inspired eats over the past 6 years (some of which are Wild Rose D-Tox Friendly!). GILDED VANILLA PEAR SPARKLER


Happy New Years Eve Eve, craft COCKTAIL lovers! After a restful holiday vacation, I’m back today with a fresh cocktail recipe (and a fun giveaway) to help you send 2020 off in style! My Gilded Vanilla Pear Sparkler is a glitzy, French 75 inspired sparkling cocktail nuanced with an elegant seasonal flavour profile and premium ingredients (including Eau Claire Distillery’s 24 karat gold infused Christmas Gin!). Although this NYE in quarantine is unlike the celebrations of years past we’ve become accustomed to, that doesn’t mean it has to be any less glamorous or memorable — and if you’re looking for an NYE inspired sip to celebrate the end of a challenging year, I have just the recipe. I invite you to put your best suit or dress on, dust off your crystal and toast 2020’s departure (good riddance!) with me in the comfort of your own homes, JustineCelina style!

Inspired by all things glittering and gold, Eau Claire Distillery‘s Limited Edition Christmas Gin  combines with Brut Prosecco, Italian vanilla liqueur, bright lemon juice and a stunning Honeyed Vanilla Pear Syrup where Bosc pears are poached in decadent Canadian honey alongside Tahitian vanilla extract. MID CENTURY MEETS BOHO HOLIDAY DECOR


Happy holidays, friends! Can you believe we’ve nearly made it to the end of another year? What a year it’s been. Despite everything that’s happened and how different this season looks, it always brings me great joy to prepare our home for the holidays — and tonight I’m thrilled to share our Mid Century Meets Boho Holiday Decor! Even though it will just be the two of us this Christmas, I knew I wanted to keep things fun, fresh and festive this holiday season. This is our third year decorating our recently refreshed inner city Calgary apartment for the holidays — although our holiday decor went up much later than I originally intended, we love the way it came together. In fact, I think this year’s holiday decor may just be my favourite yet! As always, I mixed high, low, old and new to infuse the apartment with Christmas spirit — and today I’m detailing exactly how I pulled it all together!

Whether you’ve been with me here at JustineCelina for years or have just recently joined (welcome!), you’ll know I’m all about finding creative ways to make my favourite pieces feel fresh again — be it in my home or in your wardrobe. That said, given the state of the world (and in light of the current restrictions here in Alberta), I knew didn’t want to rely on having to shop in person for our holiday tree this year. So, instead of purchasing fresh tree as we’ve done in years past, I decided to have some fun with it and ordered a flocked artificial tree — and I adore the effect! Other than our tree and a few small decor pieces, everything else we’ve owned for years. As we live in an apartment with limited storage, it’s simply not practical for us to purchase entirely new decor each season (but to be honest, I don’t think that’s practical for anyone!). GLUTEN FREE MAPLED PUMPKIN CHAI BREAD


Foodie friends, who’s up for some healthier, pre-holiday baking? I’m thrilled to finally share my Gluten Free Mapled Pumpkin Chai Bread with you today after just over a year of recipe development! I’ve mentioned previously that due to my extensive recipe testing and development process and focus on seasonal ingredients, oftentimes recipes take over a year to make it to JustineCelina. As with any piece of content I share on this pages, quality is my top priority! Over the course of the five times (yes, really!) I’ve baked, tweaked and meticulously tested this delicious seasonal loaf, it’s become one of our all-time-favourite recipes — and I hope you enjoy it just as much as I’ve enjoyed creating it for you. I’ve also included a handful of my favourite local grocers and vendors where I picked up all of the ingredients I’ve used in this recipe. Now more than ever, local businesses need our support and I’d like to ask you to consider how you can support your local economy (in whatever capacity you’re able to) as we transition into the holiday season.

My Gluten Free Mapled Pumpkin Chai Bread typifies late autumn by combining two of my favourite seasonal flavour profiles in one deceptively decadent, easy-to-bake loaf that’s free of dairy, gluten, refined sugar and oil. Exceptionally moist and perfectly spiced, this simple, seasonal pumpkin bread tastes like an indulgent fall cake, but is loaded with nourishing ingredients and warm, healing spices! Pumpkin puree, creamy coconut milk, pure Canadian maple syrup and a splash of Mexican vanilla extract are beautifully complimented by a rich melange of quintessential chai spices — including cinnamon, ginger, cloves, allspice, cardamon and anise. The result is an incredibly delicious ‘free from’ pumpkin loaf to be enjoyed by plant based eaters, those with food allergies and sensitivities and anyone that loves delicious seasonal baking!
