GILDED VANILLA PEAR SPARKLER

Happy New Years Eve Eve, craft COCKTAIL lovers! After a restful holiday vacation, I’m back today with a fresh cocktail recipe (and a fun giveaway) to help you send 2020 off in style! My Gilded Vanilla Pear Sparkler is a glitzy, French 75 inspired sparkling cocktail nuanced with an elegant seasonal flavour profile and premium ingredients (including Eau Claire Distillery’s 24 karat gold infused Christmas Gin!). Although this NYE in quarantine is unlike the celebrations of years past we’ve become accustomed to, that doesn’t mean it has to be any less glamorous or memorable — and if you’re looking for an NYE inspired sip to celebrate the end of a challenging year, I have just the recipe. I invite you to put your best suit or dress on, dust off your crystal and toast 2020’s departure (good riddance!) with me in the comfort of your own homes, JustineCelina style!

Inspired by all things glittering and gold, Eau Claire Distillery‘s Limited Edition Christmas Gin  combines with Brut Prosecco, Italian vanilla liqueur, bright lemon juice and a stunning Honeyed Vanilla Pear Syrup where Bosc pears are poached in decadent Canadian honey alongside Tahitian vanilla extract. The result is an opulent, gold infused winter cocktail that’s equal parts creamy, crisp and refreshing — and it couldn’t be easier to mix up at home! To help spread some holiday cheer, I’ve partnered with Eau Claire Distillery to give away a full sized bottle of Christmas Gin and 2 coupe glasses to one of my Canadian friends — you’ll find details on how to enter near the bottom of the post (this giveaway has now closed). Cheers to a brighter 2021!

ROSEMARY FIG JAPANESE WHISKY SOUR

Fig season is upon us — and I’m back today with a fresh, summer meets autumn sip to celebrate! My Rosemary Fig Japanese Whisky Sour was actually conceived at the height of quarantine back in April (when we were encouraged to limit our grocery runs as much as possible) — another exercise in using what we had on hand to to whip up a comforting COCKTAIL at home. Despite this recipe using fig preserves (rather than fresh figs you see photographed), I waited patiently for fig season to bring this inventive cocktail to life — simply so I could make it as beautiful as possible! And while I never thought I’d be incorporating Japanese whisky or egg whites into a cocktail — here we are. 2020 has been full of curveballs, but one thing is has been good for is nurturing my mixology skills and pushing me to create more resourceful, experimental recipes! There have been many a Rosemary Fig Japanese Whisky Sour consumed this year as this recipe underwent an intensive testing process to ensure it was shaken to perfection — and I’m elated to finally bring it to JustineCelina this fall!

My Rosemary Fig Japanese Whisky Sour is a deliciously luxurious juxtaposition of fall flavours and textures that you can shake up at home. This creative cocktail is creamy, smoky, sweet and sour — enveloping your tastebuds in early autumn inspired warmth! Premium Japanese whisky (thanks to Adam’s latest spirit obsession!) combines with egg whites (with a vegan option), fig syrup, bitters, fresh lemon juice and a sprig of rosemary, shaken into a comforting sip that celebrates quintessential fall flavours in cocktail form. If your looking to satisfy your cocktail lounge cravings at home this autumn, look no further! Dust off your shaker, slip on your fuzzy slippers, light a fire and learn how to shake up this sumptuous, seasonally inspired Japanese whisky sour in the comfort of your own kitchen. Cheers to breaking out of our cocktail comfort zones with beautiful, seasonally inspired ingredients!

28 PLANT BASED RECIPES MADE WITH PANTRY STAPLES, FROZEN FOOD AND STURDY PRODUCE

Happy Saturday, friends. How’s everyone doing? These are certainly strange and uncertain times. Never in my wildest dreams did I imagine blogging about this topic, under these circumstances! But like many of you, I’ve been reflecting on how I can best serve my community in this time of need — and its been so heartening reading stories of individuals and businesses stepping up to care for one another. I’ve always taken great comfort in preparing nourishing meals for myself, my family and my friends — and that extends to all of you! In light of recent world events and the different realities we’re all currently facing in this unprecedented situation, this week I focused on what I could do here at JustineCelina to help. As we spend more time in our homes over the next few weeks (or months) and adapt to a new normal, we’ll inevitably be cooking and eating more meals at home — something I’m very passionate about. So, I rescheduled the pretty cocktail I had originally slated to publish on Spring Equinox (which is now live!) to bring you 28 Plant Based Recipes Made With Pantry Staples, Frozen Food and Sturdy Produce — the ultimate resource in feeding yourself and your family well, and economically, during this challenging time.

I’ve scoured my virtual recipe box to compile 28 extensively tested, plant-based, inexpensive, easy to prepare, immune boosting recipes from breakfast through dinner (with snacks in-between!). Each of these recipes are free of dairy, gluten and refined sugar, but many also yield large batches — which are perfect for families, meal prep or freezing to ensure you have nutrient dense meal options on hand. I’ve always been one to keep a well-stocked kitchen — the majority of my recipes focus on inexpensive but versatile, plant based, pantry, freezer and fridge staples that pack a nutritional punch. I’ve also sprinkled this mega-post with ingredient substitution ideas and tips for maximizing the life of your produce, so you can make the most of what you have on hand (this is actually how my most inventive recipes are conceived, food never goes to waste in my kitchen!). We’re all in this together — so if you’re craving some time in the kitchen cooking, baking and recipe making, I’ve got you covered!

FALL HARVEST BOWLS WITH CREAMY POPPYSEED DRESSING

As autumn comes to a close and the holiday season approaches, I’m back today with my Fall Harvest Bowls with Creamy Poppyseed Dressing — an inventive vegan entrée that combines some of my favourite seasonal ingredients in a nutritious, protein packed bowl! Although it’s been awhile since I’ve published a SALAD or BOWL recipe here at JustineCelina, if you follow along with my Stories, you’ve undoubtedly seen me whip these up almost weekly over the past few months. This recipe was originally conceived back in August when I was yearning for my first taste of fall flavours — and after many rounds of testing to make sure it was just right, I’m eager to share the perfected recipe with you!

My Fall Harvest Bowls with Creamy Poppyseed Dressing are an ultra nourishing, 30 minute vegan meal that beautifully showcase seasonal produce and pantry staples, but can be enjoyed year-round. A bed of baby spinach and arugula houses a hearty melange of black glutinous rice, chick peas, fresh apples and shredded carrots — topped off with a tanini-based Creamy Poppyseed Dressing, dried cranberries and roasted pecans. If you’re into meal prepping, you can also whip up a large batch of rice and multiple batches of dressing on the weekend — and have healthy, effortless weekday dinners and hearty lunch options sorted for the week. Come join me in my kitchen for a fresh, vegan bowl brimming with nutrients that celebrates late autumn while fueling you up for the busy holiday season ahead!

VIOLETTE NOIR BERRY SANGRIA

Just ahead of the holiday season, I’m thrilled to bring my sixth sangria recipe to JustineCelina today (if you’re new here, why yes, I adore sangria!). In years past, I’ve shared my tried and true recipes created with wine and spirits you would traditionally associate with sangria — but over the years as I honed my mixology skills I’ve also become just as passionate about craft cocktails. Now that I have a well-rounded baseline of sangria and cocktail recipes to work from, I find myself drawn to more creative and interesting ingredient combinations and flavour profiles — and that’s exactly how the idea for my Violette Noir Berry Sangria was born! Although I have a Classic Winter Citrus Red Sangria (my original sangria recipe that inspired all the others!), I’d always wanted to develop a berry-forward sangria using less conventional grapes and liqueurs. So this summer, I got to work using some of the more elusive ingredients in our bar — and today I’m finally sharing the recipe, after 6 months of extensive testing!

My Violette Noir Berry Sangria is a dramatic, berry-infused libation where bold, luscious flavours of raspberry-laden Chambord, floral Crème de Violette, juicy blackberry and a fresh kiss of citrus intertwine over an elegant Pinot Noir backdrop. This sophisticated, Parisian-inspired spin on traditional red sangria is as intricate as it is accessible — seducing both wine lovers and skeptics with each delicious, antioxidant-rich sip. It’s the ideal accompaniment to festive cocktail parties, formal occasions, holiday dinners or anytime you’re craving a refined, wine-based bracer to delight and surprise even the most discerning of palettes! As always, my Violette Noir Berry Sangria brimming with fresh, better-for-you ingredients and is free of added sugars — because I believe in balance in all areas of life. Cheers to a happy and healthy holiday season!

SLOW COOKER VEGAN MULLIGATAWNY SOUP WITH RED LENTILS

I’m typing to you from the fringe of the 2019 polar vortex here in Calgary — and man, it’s cold outside (guess I spoke too soon about our unseasonably mild winter weather!). I’m very content to be curled up with a big bowl of Slow Cooker Vegan Mulligatawny Soup with Red Lentils in my chenille sweatpants and fuzzy sock as I edit this post! I hope everyone in affected areas is staying warm, cozy and safe out there.

But what better time than a polar vortex to make a hearty slow cooker recipe, am I right?! Warm up with a batch of my Slow Cooker Vegan Mulligatawny Soup with Red Lentils — an ultra clean, nourishing, protein packed, plant-based spin on a classic English soup with South Indian roots. The best part? You likely have most (if not all!) of these ingredients on hand and this recipe truly couldn’t be easier! A hearty base of red lentils combines with a mirepoix of carrots, celery, onion and apple simmered in an rich, exotically spiced, tomato-based broth with a splash of coconut milk and a kiss of cinnamon. Juicy pomegranate arils, toasted cashews and fresh cilantro garnish my favourite winter soup to perfection — creating a beautiful mosaic of inviting flavour, texture and colour where hearty winter produce sings. If you love vegetable-based curries and warming winter soups but want to try something new, this playful, plant-powered spin on authentic Indian mulligatawny is for you!

JANUARY 2019 SOUNDTRACK

Dry January is almost over — and that means I’m back with 2019’s first Monthly Soundtrack! While I’ll be very glad to indulge in a glass of wine on February 1st, abstaining from alcohol, getting back into my fitness regime, being more mindful with my time and taking a step back during the first 2 weeks of the month to get re-inspired, set intentions and plan for the for year has made for the most inspired and productive January I think I’ve ever had. I’m feeling so optimistic and excited to dive into 2019 — and this 3+ hour January 2019 Soundtrack fueled an absolutely fantastic month!

So, what tracks kept my motivation running at an all time high? The War On Drug’s Thinking of a Place will always remind me of our magical Canmore NYE getaway (I shared some highlights from our trip in this post) and I had tunes from The 1975, Phantastic Ferniture, Jordan Critz, Evolution of Stars, The American Dollar, Men I Trust, Aphex Twin, Lofive, Barrie, No Rome, Loyle Carner, Moon Moon Moon, KAWALA, flor, SOAK, ayokay, Bearson and Geographer on repeat. I hope you enjoy this lighthearted, eclectic playlist!
