PLANT BASED PUMPKIN PIE ENERGY BITES


How was your Thanksgiving weekend, Canadian friends? We had a very busy one traveling all over Alberta celebrating with family and friends before heading to a mountain wedding on Sunday. So, today I’m so excited to bring you a new recipe inspired by my favourite Thanksgiving treat (that sadly I’m unable to fully enjoy due to my dairy and gluten intolerances!) — Plant Based Pumpkin Pie Energy Bites! I’m sure I wasn’t the only one looking to eat a bit cleaner and lighter this week after an indulgent weekend — and that’s was exactly the thinking behind this recipe! It offers all the flavours of traditional pumpkin pie, rolled up into a tasty, nutrition packed little bite. I created them for all my fellow plant based eaters who may also have food intolerances and sensitivities — these simple, no bake little balls of goodness are free of dairy, gluten and refined sugar and they seriously taste exactly like pumpkin pie!

If you love pumpkin pie so much you’d like to eat it for breakfast and dessert… and well, anytime you need a little extra fuel to power your busy lifestyle, this recipe is for you! My Plant Based Pumpkin Pie Energy Bites combine pumpkin puree with a powerhouse medley of nuts and seeds, oats, shredded coconut, medjool dates and local honey (or maple syrup, if you’re vegan!) with cozy, autumnal spices for a portable dose of pumpkin pie whenever and wherever you need it. Make them in bulk, freeze them, pack them for lunch (or for your childrens lunches!), or throw a few in a Ziplock bag and tuck them away in your purse for an autumn inspired, nourishing snack on the run! Wait I’m confused… what season is it? Watermelon is still front and centre at my local grocer and yet it’s snowing (oh, how I wish I was kidding). SPRING VEGETABLE STIRFRY WITH COCONUT GINGER TOFU (WILD ROSE D-TOX FRIENDLY!)


Do you remember when we did the Wild Rose D-Tox back in March? If you were following along on Insta Stories, I shared (almost) every meal I made during those 12 days. You may also remember me raving about how incredible our Day 1 dinner was — well, today I’m finally sharing the recipe for my Spring Vegetable Stirfry with Coconut Ginger Tofu with you!

Initially this recipe it was a team effort, with both of us tossing ideas around and throwing things in the pan while this stirfry came together. And we both couldn’t stop eating it! It was the best recipe to come out of our D-Tox. Since the premade sauces and condiments I would typically use in a stiryfry-style dish (think soy sauce, fish sauce, peanut butter, etc.) weren’t permitted, we went in a completely different direction! The result was a colourful medley of spring vegetables in a coconut milk-based sauce — flavoured with garlic, ginger, lime and simple pantry spices ontop of a bed of brown rice, finished with toasted almonds for some extra crunch and protein. In my quest for nut based milks with a D-Tox friendly ingredient lists (not an easy feat, my friends!), I found Almond Breeze’s Unsweetened Almond Coconut Beverage and am thrilled to be partnering with Almond Breeze again today to bring you my Spring Vegetable Stirfry with Coconut Ginger Tofu! NEW YEAR, NEW GOALS: CULTIVATING A BALANCED 2017

So we’re half way into the first month of a fresh new year — how’s everyone doing? Did you set new goals, intentions and resolutions for 2017, or are you not really into that whole thing? Each year, I take the beginning of January as an opportunity to reflect on the year prior and evaluate how I can continue to grow and better myself in the upcoming year (if you’ve been with me since last year, you may remember my New Year, New Goals: Planning for a Successful 2016 post). I truly embrace the inherent fresh start that a new year provides and while I make it a priority to check in with myself often, a major overhaul was needed this year! I think the start of a new year is just as good a time as any to reflect, evaluate and set fresh intentions.

Today I’m sharing 5 goals and plans I’ve created for myself with then intention of cultivating more balance in my life in 2017 (and beyond!), plus what I’ve already done to work towards them. I’m also sharing some of my favourite planning, scheduling and creative tools to help me maximize my time, get organized, grow creatively and stay inspired!
