Happy Saturday, friends. How’s everyone doing? These are certainly strange and uncertain times. Never in my wildest dreams did I imagine blogging about this topic, under these circumstances! But like many of you, I’ve been reflecting on how I can best serve my community in this time of need — and its been so heartening reading stories of individuals and businesses stepping up to care for one another. I’ve always taken great comfort in preparing nourishing meals for myself, my family and my friends — and that extends to all of you! In light of recent world events and the different realities we’re all currently facing in this unprecedented situation, this week I focused on what I could do here at JustineCelina to help. As we spend more time in our homes over the next few weeks (or months) and adapt to a new normal, we’ll inevitably be cooking and eating more meals at home — something I’m very passionate about. So, I rescheduled the pretty cocktail I had originally slated to publish on Spring Equinox (which is now live!) to bring you 28 Plant Based Recipes Made With Pantry Staples, Frozen Food and Sturdy Produce — the ultimate resource in feeding yourself and your family well, and economically, during this challenging time. 

I’ve scoured my virtual recipe box to compile 28 extensively tested, plant-based, inexpensive, easy to prepare, immune boosting recipes from breakfast through dinner (with snacks in-between!). Each of these recipes are free of dairy, gluten and refined sugar, but many also yield large batches — which are perfect for families, meal prep or freezing to ensure you have nutrient dense meal options on hand. I’ve always been one to keep a well-stocked kitchen — the majority of my recipes focus on inexpensive but versatile, plant based, pantry, freezer and fridge staples that pack a nutritional punch. GLUTEN FREE SASKATOON CITRUS BANANA BREAD


Saskatoon berry season is just around the corner — and I’m back today with a new, citrus infused banana bread recipe to celebrate! If you’ve been with me since last summer, you’ll know I absolutely adore saskatoons and look forward to picking buckets full each summer. So, it will come as no surprise that I’ve actually been testing this recipe since late winter with our stash of frozen saskatoons. My Gluten Free Saskatoon Citrus Banana Bread recipe is the result of cleaning out our freezer and fruit bowls one snowy, frigid winter day and incorporating whatever ingredients we had on hand — which always seems to yield the most delicious RECIPES in the JustineCelina kitchen!

My Gluten Free Saskatoon Citrus Banana Bread is free of dairy, gluten and refined sugar and full of healthier, natural substitutions — perfect for those of us with food allergies, intolerances or sensitivities. An inspired melange of bananas, saskatoons and fresh orange and lemon juices combine with plant-based baking staples of coconut, maple and just a splash of bourbon (it’s my newest baking secret ingredient!) to create a bright, nourishing banana bread combining the best of summer and winter with a cheerful, citrusy twist! It makes for a fantastic breakfast, snack or clean dessert anytime you’re craving a berry-forward banana bread, year round. GLUTEN FREE PUMPKIN TURMERIC MUFFINS


It’s been almost exactly one year since I published a baking recipe — but I promise, my Gluten Free Pumpkin Turmeric Muffins are worth the wait! Believe it or not, I’ve never actually baked with pumpkin here at JustineCelina, although I have integrated it into seasonal breakfast bowls, smoothies and energy bites (what can I say — I love pumpkin!). And what’s not to love? Besides being incredibly delicious, it’s also brimming with along with loads of fiber, vitamins A, B6, C and E, thiamin, niacin, vitamin B6, folate, iron (great for us plant-based eaters!), magnesium, phosphorus riboflavin, potassium, copper and manganese. Coupled with the mega dose of healing, anti-inflammatory turmeric, fresh ginger and classic fall spices at play, these seasonal muffins also boast a wide array of health benefits and medicinal, healing qualities. I’ve mentioned many times previously that I believe you can treat yourself and nourish yourself at the same time — and these sweet n’ spicy seasonal muffins are the perfect example of that!

My Gluten Free Pumpkin Turmeric Muffins are free of dairy, gluten, refined sugar and oil — and a fantastic way to start your day while sneaking in tons of nutrition, even when you’re on the run! With the holidays just around the corner, these are incredibly busy times and I’m always looking for simple, nutritious options to help me stay on track with my health and fitness goals. Pumpkin puree (use a good quality store bought version, or snag my easy homemade recipe here), pure Canadian maple syrup, decadent coconut milk, freshly grated ginger and a kiss of pure vanilla combine with warming fall spices of cinnamon, nutmeg, cloves and allspice to create a light and fluffy, plant based muffin to help you power through your day. Enjoy them at breakfast, as a mid-day snack, or as a lighter alternative to more calorie-laden pumpkin-based desserts. This deceptively ‘free from’ recipe and can be enjoyed by plant-baser eaters, people with food allergies and sensitivities and anyone that loves delicious seasonal baking!

GLUTEN FREE SPICED SWEET POTATO BREAD


Wow, it’s been a minute since I published a bread recipe here at JustineCelina! Today I’m so happy to finally share one of the very first loaves I ever developed — seriously you guys, this recipe is ancient. It’s funny — there are so many old recipes like this that I’ve never had the chance to share with you! Currently I have about ten autumn recipes in my archives that have accumulated over the years — since I like to share things seasonally and don’t blog about food exclusively, you can see how they’d really add up. Well, this is one of them! My friends and family are very familiar with my Spiced Sweet Potato Bread recipe, however, this autumn I revamped it to be free of dairy, gluten (both of which I now have sensitivities to), refined sugar and oil. Sounds like a drag right?! Wrong!

My Gluten Free Spiced Sweet Potato Bread tastes like a beautifully spiced, indulgent, autumnal cake — I promise absolutely no one will know it’s a ‘free from’ recipe! A mega dose of nutritious, mashed sweet potatoes and decadent coconut milk mix and mingle with fall spices of cinnamon, nutmeg, cloves, ginger and allspice to create a dense, cake-like loaf enjoyed by plant baser eaters, people with food allergies and sensitivities and anyone that loves delicious seasonal baking! If you’re looking for healthier or allergy free alternative to seasonal desserts for Thanksgiving or holiday festivities, this Gluten Free Spiced Sweet Potato Bread is my top recommendation. I brought it to a family Thanksgiving dinner and it was a hit — even the picky eaters and little ones loved it! It also makes a fantastic breakfast, snack or clean dessert anytime you’re craving something sweet, spicy and nourishing. WILD SASKATOON BERRY CRUMBLE


Happy Monday, everyone! How was your weekend? If you’ve been following along with my Insta Stories lately you likely caught a glimpse of what my weekend looked like, including my very first saskatoon picking adventure! An old friend of mine invited us to forage their family farm near Carseland, Alberta where the saskatoons are flourishing — it’s the best crop they’ve ever had. I spent Saturday evening strolling through saskatoon tree lined paths with my Mom and little sister — bucket in one berry stained hand and camera in the other (now that’s my kind of girls night!). It was a gorgeous evening and we came away with overflowing buckets, happy hearts and about 8 pounds of berries!

Enjoy the bounty of our beautiful Canadian prairies with my Wild Saskatoon Berry Crumble — a simple, 9 ingredient recipe with a wholesome, plant based spin. It’s free of dairy, gluten and refined sugar — and bursting with decadent berry flavour! PROTEIN PACKED CHERRY ALMOND GRANOLA


I decided, spur-of-the-moment, to clean out the pantry one Saturday morning earlier this month… which usually leads to an impromptu cooking session! The product of my weekend cleaning spree was this completely unplanned granola recipe — and of course it was delicious, because I didn’t write anything down (#foodbloggerfail). As things go around here, almost every time I bake or cook without an agenda, it ends up being a recipe that I deem to be blogworthy (and thankfully, granola ingredients are pretty easy to dissect!). At the request of my Insta Story friends who got a sneak peek at the initial batch of this recipe, I threw it into testing so I could share it here with you!

As you might guess, my Protein Packed Cherry Almond Granola is made with… well, pantry staples! In fact, I bet you have most of these ingredients kicking around your kitchen right now. A nutritious, antioxidant rich blend of oats, almonds, pepitas, shredded coconut, cocoa nibs, dried cherries and a plant based vanilla protein powder (it may seem crazy, but it adds tons of extra protein and natural sweetness to this granola!) combine with coconut oil, organic Canadian maple syrup (eh?!) a kiss of cinnamon and a dash of salt to create a versatile granola that can be enjoyed in your breakfast bowls, smoothie bowls, parfaits and alone as a snack all summer long. As I sit here editing this post, I’m noshing on a bowl with fresh BC cherries, nut milk and one of those frothy lattes! Oh, and did I mention it comes together in 20 minutes?
