GLUTEN FREE PUMPKIN TURMERIC MUFFINS


It’s been almost exactly one year since I published a baking recipe — but I promise, my Gluten Free Pumpkin Turmeric Muffins are worth the wait! Believe it or not, I’ve never actually baked with pumpkin here at JustineCelina, although I have integrated it into seasonal breakfast bowls, smoothies and energy bites (what can I say — I love pumpkin!). And what’s not to love? Besides being incredibly delicious, it’s also brimming with along with loads of fiber, vitamins A, B6, C and E, thiamin, niacin, vitamin B6, folate, iron (great for us plant-based eaters!), magnesium, phosphorus riboflavin, potassium, copper and manganese. Coupled with the mega dose of healing, anti-inflammatory turmeric, fresh ginger and classic fall spices at play, these seasonal muffins also boast a wide array of health benefits and medicinal, healing qualities. I’ve mentioned many times previously that I believe you can treat yourself and nourish yourself at the same time — and these sweet n’ spicy seasonal muffins are the perfect example of that!

My Gluten Free Pumpkin Turmeric Muffins are free of dairy, gluten, refined sugar and oil — and a fantastic way to start your day while sneaking in tons of nutrition, even when you’re on the run! With the holidays just around the corner, these are incredibly busy times and I’m always looking for simple, nutritious options to help me stay on track with my health and fitness goals. Pumpkin puree (use a good quality store bought version, or snag my easy homemade recipe here), pure Canadian maple syrup, decadent coconut milk, freshly grated ginger and a kiss of pure vanilla combine with warming fall spices of cinnamon, nutmeg, cloves and allspice to create a light and fluffy, plant based muffin to help you power through your day. Enjoy them at breakfast, as a mid-day snack, or as a lighter alternative to more calorie-laden pumpkin-based desserts. This deceptively ‘free from’ recipe and can be enjoyed by plant-baser eaters, people with food allergies and sensitivities and anyone that loves delicious seasonal baking!

LATE HARVEST SPICED APPLE SANGRIA


I bet you thought I’d abandoned sangria for COCKTAILS, didn’t you? Although sangria was definitely my first love, as I’ve dived deeper into recipe development and mixology here at JustineCelina, my foray into cocktailing over the past 3.5 years was something I never would have predicted (I’m a huge wino and I thought I’d always prefer wine based libations to cocktails!). I’ve published just about every type of sangria recipe you can think of on these pages, incorporating red wine, white wine, rosé and prosecco — you’d think I’d have my bases covered by now, right? Nope. I’ve always wanted to create an autumnal sangria incorporating October’s beautiful BC apples and late harvest wine, but could never find the right spirit to bring it to life — that is, until now! This seasonally inspired spirit is infused with orchard fresh Okanagan apples and the essence of warm French oak — and I knew it would be the perfect ingredient to elevate my Late Harvest Spiced Apple Sangria with handcrafted flair and character!

ROSE INFUSED CHERRY GIN FIZZ


Remember the summer I acquired a taste for gin? It’s since become my favourite spirit. In fact, around this time last year I even ventured to Vancouver Island to track down an infamous local gin unavailable in Alberta (I also made a cocktail with that one!). Although the gin I brought home from my coastal travels is long gone, late last year I stumbled on Eau Claire Distillery via Instagram (their bottles are gorgeous and totally drew me in!). Imagine my surprise to find out we have an incredible, award winning distillery less than an hour from home! Over the holidays I took a trip to the visit their distillery in Turner Valley with my Mom (who loves gin) and my brother (who was home from New York and loves cocktails) for a tour and tasting — and we were all completely blown away by the quality of Eau Claire’s hand crafted offerings and their farm to glass approach. Now that I know they exist (and they’re local!) I actually can’t fathom using anything else in my cocktails! Over the last couple of months, we’ve padded our bar with several of Eau Claire’s artisinal spirits — including their most recent offering, Cherry Gin.

In honour of love day, I’m so excited to share my Rose Infused Cherry Gin Fizz! This feminine, fruity and lightly floral cocktail combines Eau Claire’s stunning Cherry Gin with my favourite Prosecco, a splash of fresh lemon juice and a Rose & Pink Peppercorn Infused Honey Simple Syrup for a contemporary spin on the classic French 75. JANUARY BLUES, 2018 PLANS + MY 300TH BLOG POST!


I kept flip flopping back and forth about this post — and that’s part of the reason it’s getting to you on February 1st, rather than January 1st. Should I just publish the TREND GUIDE I had originally planned for these photos? Should I save these thoughts for a traditional New Year, New Goals style post, or my 3rd Blogiversary? Should I open up about all these things? Or should I just proceed with regularly scheduled programming? Do people like more personal posts? Is it okay to publish 2 posts in one day? Will anyone even notice or care?

These are exactly the kind of over analytical, consuming thoughts that I can pretty much guarantee all creatives, bloggers and content creators have faced at one point or another while they’re in the process of creating whatever it is they create. But today, instead of the FASHION content I had originally written to accompany these images, I’m going to share something that’s been on my heart and my mind for the entire month of January. This year, there will be no New Year, New Goals post, like I’ve published every January since starting JustineCelina almost 3 years ago. There aren’t any styled flatlays with planners, coffee and flowers today — because here’s the truth. If you want to make real changes in your life, all the planners, scheduling tools and cute stationary in the world won’t do it for you. Only you can do that for yourself. So today, it’s just me.

I’m fully embracing these slow, cozy, lazy days between Christmas and New Years Eve and wanted to get this post out for you — I know I’m always craving some major fruits and vegetables after a few days of holiday indulgence! Tonight I’m thrilled to bring you my Vegan Slow Cooker Tortilla Soup with Winter Squash — a no fuss recipe packed full of nourishing, plant based ingredients that eats like a meal!

CLASSIC WINTER CITRUS RED SANGRIA


Remember when I mentioned all the seasonal recipes I have in my backlog? Well, today I’m finally publishing the very first sangria recipe I ever developed — almost 10 years ago (yikes!). I honestly can’t even tell you how many times I’ve made this Classic Winter Citrus Red Sangria with friends and family over the years, but I bet it’s more than 50. In fact, it was this recipe that inspired my sangria craze — it’s the original! It was singlehandedly responsible for a large portion of my 20’s being a bit hazy and escalating some of my favourite entertaining memories (or lack there of!) in our first homes over the years! This classic red sangria never fails to get the party started (now that’s the understatement of the century!) and is my all time favourite beverage to make when we’re hosting or attending a party, especially during the cooler months. It’s absolutely delicious and approved by friends, moms, dads, grandmas, grandpas, cousins, aunts, uncles, nieces, nephews and inlaws — even the non-wine drinkers rave about it! So, I figured it was finally time to unleash the recipe on the world — however, I will not be held liable for any life altering hangovers that ensue after a few too many glasses (hey, it goes down easy — consider yourself warned!).

My Classic Winter Citrus Red Sangria is the quintessential holiday cocktail, marrying fruity zinfandel and apricot brandy with festive, seasonal flavours of satsuma, lime, lemon, pomegranate and a hint of cozy cinnamon. This better-for-you holiday cocktail is free of added sugar and brimming with clean, plant based ingredients plus a mega dose of antioxidants. If you love to entertain, this simple, jubilant sangria will leave your guests feeling merry and bright!
