VEGAN POWER SALAD WITH LEMON DILL DRESSING


Wow, it’s been a hot minute since I published a salad or bowl recipe! As a plant-based eater, I truly live on fruits and vegetables, but often feel many of my everyday meals may be too simple to publish and therefore they don’t make their way to these pages. This winter has been laden with soups, slow cooker creations and tons of roasted vegetables — and as it draws to a close, I find myself craving bright, fresh, spring-inspired flavours! I initially whipped up this salad after a workout (did you know you can browse my favourite home-based workouts here?) when we were low on groceries, so I cleaned out the fridge and rummaged through the pantry to pull together a meal — and the results were surprisingly delicious. When I shared my impromptu lunch over on Stories I received an overwhelming response about your interest in ultra simple lunch ideas! So, I tested these experimental bowls a few more times to make sure they were just right — and they’ve since become an all-time-favourite in the JustineCelina kitchen!

SLOW COOKER VEGAN MULLIGATAWNY SOUP WITH RED LENTILS


I’m typing to you from the fringe of the 2019 polar vortex here in Calgary — and man, it’s cold outside (guess I spoke too soon about our unseasonably mild winter weather!). I’m very content to be curled up with a big bowl of Slow Cooker Vegan Mulligatawny Soup with Red Lentils in my chenille sweatpants and fuzzy sock as I edit this post! I hope everyone in affected areas is staying warm, cozy and safe out there.

But what better time than a polar vortex to make a hearty slow cooker recipe, am I right?! Warm up with a batch of my Slow Cooker Vegan Mulligatawny Soup with Red Lentils — an ultra clean, nourishing, protein packed, plant-based spin on a classic English soup with South Indian roots. The best part? You likely have most (if not all!) of these ingredients on hand and this recipe truly couldn’t be easier! A hearty base of red lentils combines with a mirepoix of carrots, celery, onion and apple simmered in an rich, exotically spiced, tomato-based broth with a splash of coconut milk and a kiss of cinnamon. 2018 REVIEW + 2019 GOALS


Well hello, friends! It’s been a little while since I’ve posted — I took some time during the first half of this dry January (it’s actually been great!) to reflect on the past year, get re-inspired and really put some thought into what I’d like to achieve in 2019. It’s been a very valuable exercise, so thank you for your patience! Today I’m dishing on everything I’ve discovered in this real, raw, lengthy (we’re talking the longest post I’ve ever written!) read recapping 2018 and sharing my intentions, aspirations and goals for the new year — plus exactly how I plan to achieve them!

When I look back on my goals post from last year, I feel grateful to be in a much better head space and place in my life — although it was a long road to get here. Longtime readers will know I’m always very transparent about the staggering amount of work that goes into blogging, content creation and creative entrepreneurship — and from the day I stared this blog in March of 2015 through to the end of 2017, I hustled hard. As a result, I entered 2018 feeling completely burnout, uninspired and unsure of how to proceed. I knew a change was necessary for me to move forward and progress in a way that would allow for more balance and well being in my life (and therefore more inspired work), but I wasn’t exactly sure how to get there. I felt like I needed to slow down and take life as it came, rather than creating an exhaustive list of all the things I felt I needed to accomplish — and I spent 2018 doing just that. I changed course and made chasing my passions for HOME and FASHION based content my first priority, which resulted in a pretty monumental year here at JustineCelina. That said, the largest shifts I made were off of these pages, in my mental and physical health, relationships and life in general. Fast forward to January of 2019 and I’m feeling energized, more inspired and productive than ever — and ready to make 2019 my best year yet! GLUTEN FREE PUMPKIN TURMERIC MUFFINS


It’s been almost exactly one year since I published a baking recipe — but I promise, my Gluten Free Pumpkin Turmeric Muffins are worth the wait! Believe it or not, I’ve never actually baked with pumpkin here at JustineCelina, although I have integrated it into seasonal breakfast bowls, smoothies and energy bites (what can I say — I love pumpkin!). And what’s not to love? Besides being incredibly delicious, it’s also brimming with along with loads of fiber, vitamins A, B6, C and E, thiamin, niacin, vitamin B6, folate, iron (great for us plant-based eaters!), magnesium, phosphorus riboflavin, potassium, copper and manganese. Coupled with the mega dose of healing, anti-inflammatory turmeric, fresh ginger and classic fall spices at play, these seasonal muffins also boast a wide array of health benefits and medicinal, healing qualities. I’ve mentioned many times previously that I believe you can treat yourself and nourish yourself at the same time — and these sweet n’ spicy seasonal muffins are the perfect example of that!

My Gluten Free Pumpkin Turmeric Muffins are free of dairy, gluten, refined sugar and oil — and a fantastic way to start your day while sneaking in tons of nutrition, even when you’re on the run! With the holidays just around the corner, these are incredibly busy times and I’m always looking for simple, nutritious options to help me stay on track with my health and fitness goals. Pumpkin puree (use a good quality store bought version, or snag my easy homemade recipe here), pure Canadian maple syrup, decadent coconut milk, freshly grated ginger and a kiss of pure vanilla combine with warming fall spices of cinnamon, nutmeg, cloves and allspice to create a light and fluffy, plant based muffin to help you power through your day. Enjoy them at breakfast, as a mid-day snack, or as a lighter alternative to more calorie-laden pumpkin-based desserts. This deceptively ‘free from’ recipe and can be enjoyed by plant-baser eaters, people with food allergies and sensitivities and anyone that loves delicious seasonal baking!

MY 3RD BLOGIVERSARY + 10 THINGS I LEARNED IN MY THIRD YEAR OF BLOGGING


Friends, welcome back for my annual (and very belated!) Blogiversary celebration! My 3rd Blogiversary went roaring by on March 2nd — but to be honest, I was completely engrossed in our Living Room Reveal and some other fun, last minute projects at the time. Earlier this year I chatted about changing things up around here and creating space to let life happen — and that’s exactly what I’ve done! There’s been a lot happening here at JustineCelina lately as we get ready to reveal the next rooms in our SPACE REFRESH series (coming your way later this month!) and I simply had to prioritize my time differently to make this all possible. March was one of my most creatively fulfilling months of my life — it left me completely exhausted but also incredibly inspired! In the two months since My 3rd Blogiversary I’ve reached some milestones I’ve dreamed of achieving since launching JustineCelina and they’ve reminded me exactly why I started this whole thing in the first place. So, although it’s a bit late and I’ve been chipping away at this post when I can, I couldn’t be more thrilled to share this Pantone Spring 2018 inspired 3rd Blogiversary soirée with you!

In the midst of it all, I came up with the concept for this celebratory post pretty last minute — about 10 days before the shoot (which, admittedly, was about 2 months ago!). It was so spontaneous, but serendipitous and things just fell into place (I shot it myself one sunny Friday afternoon with my tripod and self timer). This year, we’re going all out — because after 323 blog posts, almost a million views (OMG!), 180 000 images, 2 900 comments and a whole lot of blood, sweat and tears (quite literally), I truly never thought I’d get here! My third year was one of intense growth, both on these pages and off of them — I hope you enjoy reading about 10 Things I Learned in my Third Year of Blogging in this raw, honest, unabashed post (you may need a sparkling glass of rosé to get though it!). TRUFFLED BUTTERNUT SQUASH SOUP WITH CRISPY SAGE


I can’t believe it’s been nearly a year since I shared a pureed soup here at JustineCelina! And would you believe I’ve never actually published a butternut squash soup recipe? Butternut squash soup is a staple recipe in many kitchens during the cooler months — ours included. Although my Autumn Harvest Soup with Roasted Squash Seeds (published back in my early blogging days!) includes butternut squash, it also features a medley of fall produce — including apples, carrots and rhubarb. So, my standard butternut squash soup recipe remained unpublished over the years — you see, as a food blogger, these staple recipes often remain in my archives because I don’t think they’re exciting or unique enough to share. But, this winter I experimented with one of my favourite gourmet ingredients to really elevate this recipe — and here we are!

Today I’m thrilled to bring you my Truffled Butternut Squash Soup with Crispy Sage — a luxurious, sophisticated twist on a cold weather classic. With just 10 ingredients, this creamy bowl of vegan comfort is a breeze to whip up and makes a great light lunch or accompaniment to dinner. Hearty butternut squash is oven roasted with onions, fresh sage and garlic — then blended into velvety goodness with vegetable broth, coconut milk, fresh ginger and a touch of heat. To finish things off, it’s infused with an indulgent drizzle of White Truffle Oil (my most recent culinary obsession!) and garnished with crispy sage for a restaurant quality soup you can enjoy at home. Thanks to a couple of elevated ingredients, this isn’t your traditional butternut squash soup recipe — but I guarantee you it’s just as simple to prepare! JANUARY BLUES, 2018 PLANS + MY 300TH BLOG POST!


I kept flip flopping back and forth about this post — and that’s part of the reason it’s getting to you on February 1st, rather than January 1st. Should I just publish the TREND GUIDE I had originally planned for these photos? Should I save these thoughts for a traditional New Year, New Goals style post, or my 3rd Blogiversary? Should I open up about all these things? Or should I just proceed with regularly scheduled programming? Do people like more personal posts? Is it okay to publish 2 posts in one day? Will anyone even notice or care?

These are exactly the kind of over analytical, consuming thoughts that I can pretty much guarantee all creatives, bloggers and content creators have faced at one point or another while they’re in the process of creating whatever it is they create. But today, instead of the FASHION content I had originally written to accompany these images, I’m going to share something that’s been on my heart and my mind for the entire month of January. This year, there will be no New Year, New Goals post, like I’ve published every January since starting JustineCelina almost 3 years ago. There aren’t any styled flatlays with planners, coffee and flowers today — because here’s the truth. If you want to make real changes in your life, all the planners, scheduling tools and cute stationary in the world won’t do it for you. Only you can do that for yourself. So today, it’s just me.
